Welsh Pancakes

Ingredients

Cook on hob using a thick frying pan or griddle.

If using a griddle you can use a IR surface thermometer. You are looking for a temperature around 180 °C. Its best to let the griddle temperature stabilise before cooking the pancakes. Also note that adding the pancake batter will bring the temperature down. Leaving the griddle with nothing on it will increase the temperature. Due to this you are best to keep cooking the pancakes in batches of 2 to 3 at a constant rate not leaving the griddle empty until you have finished cooking all of the batter mix.
